These Easy Chipotle Sofritas are a copycat of Chipotle’s sofritas that you know and love. This recipe is with scrambled tofu for a quick and healthy dinner that’s ready in under 30 minutes! Serve the sofritas in a burrito bowl, tacos or to enjoy on its own!

An easy and healthy sofritas chipotle copycat recipe

Why go to chipotle for sofritas when you can just make them at home? Chipotle Sofritas is so easy to make at home. Once you try this recipe, it will become a staple in your kitchen.

I love to serve my sofritas in a burrito bowl with some brown rice, beans, corn, salad and top it all off with a delicious chipotle mayo. If you’re looking for a low-carb dinner option, you can serve up these sofritas on a cauliflower rice burrito bowl.

What is Sofritas?

Sofritas is made with crumbled tofu (similar to scrambled tofu) that is cooked up with a tomato-based pepper sauce with spices, garlic and onions. It’s become a super popular dish at Chipotle and for good reason, sofritas are delicious!

Is sofritas the same as tofu?

Sofritas are made with crumbled or shredded tofu that is braised in spices and sauce. While the dish is made with tofu, it’s different than how you might be used to seeing tofu be used and is packed with flavour!

What does sofritas taste like?

Sofrtias has a soft texture and flavour notes of cumin, chipotle, garlic and tomato. It can be made spicy or milder depending on personal preference.

What happened to Chipotle sofritas?

If you ever go to eat at Chipotle restaurant, you may have noticed that they don’t always have Sofritas available. This is because they can’t always get a supply of organic tofu to make the sofritas. The good news is sofrtias are so easy and even more delicious to make right at home!

  • Tofu
  • Onions
  • Garlic
  • Paprika

How to Make Sofritas Like Chipotle

Press the tofu between paper towels to remove as much liquid as possible, then cut the tofu into large cubes and add it to a food processor.

Pulse the tofu a few times until it looks crumbly like in the photo. Don’t over-pulse it! You don’t want to end up with completely blended tofu.

Heat some oil in a skillet then let the onions and garlic cook for 2-3 minutes. Add the tofu and spices and mix all together, letting the tofu brown on the bottom. Blend the crushed tomato, chipotle peppers and brown sugar together and then pour the sauce into the tofu, mixing everything together until well combined.

Tips for Making This Chipotle Sofritas Recipe Perfectly

  • Use extra-firm tofu for this recipe. Softer tofus have more liquid in them and won’t brown well in the pan.
  • You can use a food processor or just crumble the tofu by hand. If using a food processor don’t overmix the tofu.
  • If you don’t like your food spicy, start by adding one chipotle pepper.
  • Store leftovers in the fridge in an air-tight container for up to 3 days

Sofrtias are delicious eaten just alone (or straight out of the pan), but here are some other great ways to enjoy Sofritas:

  • In a burrito bowl with rice and your favourite toppings
  • Wrapped in a tortilla

How to Store, Freeze, and Reheat Sofritas

Store leftover Chipotle Sofrtias in the fridge in an airtight container for up to 5 days or in the freezer in an airtight container for up to 2 months. To defrost the sofritas let them thaw on the countertop until defrosted.

The best way to reheat the sofrtias in a pan on the stovetop on medium-high heat. This will help give the sofrtias a little crispiness on the bottom. You can also reheat sofrtias in the microwave.

Description

These copycat easy Chipotle Sofritas take less than 30 minutes to make for a healthy dinner that’s vegan and gluten-free!

Ingredients

Sofrtias

  • 1 pack extra-firm tofu
  • 1 tbsp olive oil
  • 3 garlic cloves, chopped
  • 1/2 onion, finely chopped
  • 2 tsp smoked paprika (can sub regular paprika)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 2 chipotle peppers in adobo
  • 1/2 cup crushed tomatoes
  • 2 tsp brown sugar

Chipotle sauce

  • 1/4 cup Mayonnaise of choice (vegan or regular)
  • 12 tbsp chipotle sauce (from the can of chipotles)

Serve with

  • Rice of choice
  • black beans
  • corn
  • avocado
  • shredded lettuce

Instructions

  1. Drain the tofu and press between paper towels to remove any excess liquid, then cut into large cubes and add to a food processor. Pulse to break apart the tofu until crumbled.Copycat Chipotle Sofritas Recipe - Choosing Chia (8)
  2. Heat the olive oil in a large skillet on medium-high heat. Add the onion and garlic and let cook for 2-3 minutes, then add the tofu and spices and cook for another 2-3 minutes.Copycat Chipotle Sofritas Recipe - Choosing Chia (9)

  5. To prepare the chipotle mayo, mix together the chipotle sauce with your favourite mayo.

Notes

Use firm or extra-firm tofu for this recipe. Softer tofus have more liquid in them and won’t brown well in the pan.

You can use a food processor to crumble the tofu or just crumble the tofu by hand. If using a food processor don’t overmix the tofu.

If you don’t have a high tolerance for spicy food, start with just one chipotle pepper in adobo, you can always add more spice if you like!

Store leftovers in the fridge in an air-tight container for up to 3 days
