My kids love a bowl of chocolate chip oatmeal for breakfast and their mama loves finding creative ways togive this breakfast a nutritional boost. Like in my classic go-to oatmeal, I add just a little bit of egg whites. You can’t even taste them and they add a boost of protein and give the oats a wonderful texture.

Here’s what I do:

  1. I cook the oats in the microwave for three minutes (if you are anti-microwave, you can also do this on the stovetop).
  2. Remove, and slowly stir in some egg whites. Not only do the egg whites add an extra kick of protein to the oats but they also make them super creamy. #winwin Just be sure to add them slowly so they don’t scramble.
  3. Then back in the microwave for one minute. They should be super creamy and yummy when they are done.
  4. Stir in some coconut oil and cinnamon. The extra healthy fats keep the kids full longer and I like that the coconut oil and cinnamon help to support immunity as well. As far as I’m concerned, kids can never have too many immunity boosters!
  5. Top with your favorite toppings. In this case, chocolate chips. But I also love fresh berries and nuts or nut butter swirled in.

Ingredients

  • 1 cup dry rolled oats
  • 2 cups water
  • 1/3 cup egg whites
  • 1 tbsp coconut oil
  • few dashes of cinnamon
  • 2 tbsp. chocolate chips

Instructions

  • In a microwave safe bowl, combine the oats and water. Pop into the microwave for three minutes (times may vary depending on your microwave).

  • Slowly stirin the egg whites and pop back into the microwave for one minute.

  • Stir in the coconut oil and cinnamon. Divide amongst two bowls and top with chocolate chips. Enjoy!

    I would like to make this on the stove top. How would you add the egg whites stove top method. Love your recipes!!!!

      You can easily make this on stove top – just need to be sure that when you add the whites the oats are not too hot! Try adding a splash of cold water to the pot right before adding the egg whites and then stir until the oats look creamy. THEN you can bring the heat back up.

    What wattage is your microwave? Then I would compare it on a conversion chart.

    To find an approximation of your machine’s wattage, fill a microwave-safe liquid measuring cup with 1 cup cold water. Microwave on High and keep an eye on it, noting how long it takes for the water to come to a boil:

    1 1/2 minutes: 1,200 watts

    2 minutes: 1,000 watts

    2 1/2 minutes: 800 watts

    3 minutes: 700 watts

    4 minutes: 600 watts
